Lamb & Plum Kebabs

These kebabs aren't quite traditional, but they're inspired by Middle Eastern spices and flavors. The combination of honey and plums makes this warm, sweet, and summery.


Ingredients:

- 1/2 lb lamb, cut into cubes (leg or shoulder)

- 1 black plum
- 1 red plums

- sea salt

Marinade:
- 1 1/2 T honey
- 1 1/2 T fig-infused white balsamic vinegar
- 1 t cinnamon
- 1 t freshly-ground black pepper

Dry rub:
- 1 t cinnamon
- 1 t freshly-ground black pepper
- 1 t ground ginger
- 1/2 t hot paprika


Method:


- Pit plums and cut into quarters
- Mix together marinade seasonings and let plums sit in marinade for an hour
- Mix together dry rub ingredients
- Season lamb with salt, then toss with dry rub. Let sit, refrigerated, for an hour
- Alternate lamb cubes and plum pieces on a skewer
- Grill, brushing with reserved marinade as it cooks
- Sprinkle with sea salt to finish
